Italian Caponata with House Made Parmesan Crusted Crouton
And Fresh Basil

Paired with Riesling




The Hummus Guy’s Italian Caponata

Crouton Ingredients:
-1 sourdough baguette
-¼ - ½ Cup Shredded Parmesan
-2- 4 tablespoons Stella Cadente Basil Oilve Oil
-Basil

Pre heat oven to 375 degrees

Take your baguette and cut into pieces…however you prefer. Small cube size bites, or more of a thin crostini, it is up to you! Combine ingredients listed above into a mixing bowl: bread cubes, about ¼ cup of parmesan cheese, a few drizzles (about 2 – 3 tablespoons) of Basil Olive Oil. Lay all of the cubes of bread onto a baking sheet, single layer. At this point you may or may not need to brush on a bit more olive oil, it is up to you. Toast bread for approximately 4-5 minutes and then turn bread pieces over, and toast for another 3-4 minutes.

Allow to cool and place a good heap of the Caponata on top along with your fresh basil, and enjoy!
